The best winemakers will tell you that wine is made in the vineyard not the winery, and that the winemaker’s job is to ensure the quality of the grape is expressed in the finished wine. In this intermediate to advanced level workshop we’ll look at the many choices winemakers need to take in the journey from grape to glass, and how this affects the taste of the finished wine. We’ll cover the use of sulphur, choice of vessels for fermentation and ageing, malolactic fermentation and methods of fining and filtration. Throughout the day you’ll try comparative tastings to demonstrate how these choices influence what ends up in your glass.
